Seasonal Potluck: Pear & Prosciutto Flatbread

My Seasonal Potluck recipes have taken a back seat to Holiday baking this month.  Between work, holiday get togethers, and things like the The Great Food Bloggers Cookie Exchange, I’ve barely had time to make anything besides sweets!

I love pizzas and flatbread because they’re easy and fast to make, and you can put just about anything on top of them.  My Husband often complains that we never have “regular” pizza, so I bought him a few Tombstones to keep in the freezer.  This made him happy, and me a little miffed that I even put effort into new pizza creations!  Oh well, can’t please them all, right?

Feel free to take liberties with this recipe.  That is the beauty of pizzas or flatbread.  Also, don’t forget to enter my Martha Stewart cookbook giveaway here!

Pear & Prosciutto Flatbread

  • 1 store-bought pizza crust
  • 2 Tablespoons good quality olive oil
  • 4-6 slices of prosciutto
  • 2 pears, thinly sliced
  • 2 ounces goat cheese, crumbled
  • 1 cup baby arugula

Preheat oven to 425.

Drizzle olive oil onto crust.  Layer prosciutto, pears and top with goat cheese.

Bake for about 10 minutes, or until the crust is golden brown.  Top with arugula.
