Secret Recipe Club: Avocado Strawberry Mousse

For this month’s Secret Recipe Club, I was assigned Jeanette’s blog entitled “Jeanette’s Healthy Living“.  Jeanette has a ton of great looking recipes, I actually had a lot of trouble figuring out which one to make!  I finally decided on this avocado mousse since next month’s Seasonal Potluck ingredient is avocados.  I really like Jeanette’s healthy take on recipes, and I wanted to try a recipe that I would probably not normally make.  We are not vegans in my house, but I’ve always been intrigued by vegan recipes that use avocado as a thickener, so I thought this would be a good starter recipe for me. 🙂  I was pleasantly surprised!  It wasn’t too sweet, and the tart strawberry puree complimented the creaminess of the avocado very nicely.

Avocado Strawberry Mousse, adapted from Jeanette’s Healthy Living

Strawberry Puree

  • 8 strawberries
  • 1 tablespoon honey or 1/2 tablespoon honey

Avocado Mousse

  • 1 avocado
  • 1/2 cup pineapple juice (I used pineapple-orange juice) 
  • 1 cup So Delicious Coconut Milk
  • 3 tablespoons honey or 1 1/2 tablespoon agave nectar

Blend strawberries with honey until pureed. Divide among 4 glasses.

Rinse out blender container. Blend avocado, pineapple juice, So Delicious Coconut Milk, and honey until smooth. Spoon or carefully pour on top of pureed strawberries.

Use wooden spoon handle or chopstick to create gentle swirls as desired.

Serves 2.

    Hi! Hopping over from Group D SRC. This sounds really interesting – I must give it a try! I’ve seen avocado cakes before but have not tried them. I can imagine the avocado will give a good texture. The colours look really pretty too 🙂

  11. Hmmm. I’ve been making a lot of green smoothies lately but have yet to mix avocado and strawberries. I’ll take your word on it that they’re tasty. Love the addition of the coconut milk. Very healthy!
