Chicken Apricot Salad Wrap

I’ve been in kind of food rut lately.  Ever since we got back from our trip to Mexico, I can’t seem to get back into the swing of daily meals.  Is four days of someone else cooking for me all it took for me to get lazy about making my family’s meals?!  It’s actually just a time issue.  I’m having a hard time getting back into the swing of things with a few days off.  Plus my teacher husband is on summer vacation now, and it seems every weekend is filled with parties and other summer plans.  It’s hard to go to work when you’re husband isn’t!

Anyway, easy meals like this have been hitting our table lately.  This chicken salad is healthy, tasty and quick to make!  The addition of fresh herbs from my garden gave it that little extra kick too.  Feel free to add other veggies or cheese to your own taste.  Enjoy!

Chicken Apricot Salad Wrap, makes 4 wraps

  • 1 cup diced, grilled chicken
  • 4 T apricot jam (or peach, mango, orange, etc.)
  • 2 tsp soy sauce
  • 2 T plain Greek yogurt
  • 2 apricots, thinly sliced
  • 3 T finely chopped celery
  • 3 cups mixed greens or 4 pieces Romaine lettuce
  • 2 T chopped fresh herbs (I used cilantro and parsley)
  • 4 flour tortillas

Mix together yogurt, celery, fresh herbs, apricots and jam.  Add chicken and mix well.

Divide mixed greens among the four tortillas.  Top with chicken salad, wrap and serve.
