Seasonal Potluck: Salad with Grapefruit, Avocado and Crab

Here’s and easy, refreshing salad to pair with your next meal or enjoy as a light lunch. We’re featuring grapefruit this month over at Seasonal Potluck, and this salad is a great addition.  The sweet and tangy flavors of the dressing really bring out the sweet flavor of the crab.  You could also use shrimp, if you prefer.

Salad with Grapefruit, Avocado and Crab, serves 2

  • 2 cups mixed greens
  • 4 oz lump crab meat
  • 1 avocado, peeled and sliced
  • 1 ruby red grapefruit
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/2 tsp Kosher salt
  • 1/4 tsp black pepper

Peel grapefruit and slice, removing fruit from membranes.  Leave about 4 segments intact though.  Squeeze juice out of grapefruit into a bowl.  Mix with olive oil, honey, salt and pepper.

Divide mixed greens between two bowls.  Top with sliced avocado, grapefruit segments and crab meat.  Drizzle with vinaigrette and serve.
